  • 4 potatoes
  • 4 zucchini
  • 4 eggplants
  • 1 kg minced beef
  • 800 grams crushed canned tomatoes
  • 200 grams Kefalograviera cheese (plus extra for layering)
  • 150 grams unsalted butter
  • 1 liter milk
  • Seasonings: salt, pepper, cinnamon, nutmeg, thyme, oregano

Instructions

  1. Preheat your oven to 165°C (fan-forced).
  2. Slice potatoes, zucchini, and eggplants into circles. Fry until golden brown in olive oil; drain on paper towels.
  3. In a large pot, sauté chopped onion and garlic in olive oil until translucent. Add minced beef until browned.
  4. Pour in red wine and crushed tomatoes; season with spices and parsley. Simmer for about 10 minutes.
  5. For béchamel sauce, melt butter in a saucepan, whisk in flour until smooth, then gradually add milk until thickened. Stir in egg yolks and cheese.
  6. Layer potatoes at the bottom of a baking dish; add layers of eggplant and zucchini with seasoning; pour meat sauce over layers.
  7. Top with béchamel sauce and bake for about 40 minutes or until golden brown.
  8. Allow to rest for at least 30 minutes before slicing.
