  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the creamy peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients.
  5. Scoop out about 2 tablespoons of dough for each cookie. Flatten each scoop into discs on the prepared baking sheet.
  6. Place about 1 teaspoon of jelly in the center of half of the dough discs.
  7. Top each filled disc with another dough disc and gently press edges to seal. Optionally crimp edges with a fork for decoration.
  8. Bake for about 12-15 minutes or until edges turn golden brown.
  9. Allow cookies to cool on the baking sheet for five minutes before transferring them to a wire rack to cool completely.
