  • 1 sheet puff pastry (thawed)
  • 8 oz Tofutti dairy-free cream cheese (softened)
  • 12 tbsp light agave nectar
  • 1 ½ tsp pure vanilla extract
  • 2 cups sliced peaches
  • ½ cup fresh blueberries

Instructions

  1. Thaw the puff pastry at room temperature for 30-40 minutes and soften the cream cheese.
  2. Preheat oven to 400ºF and line a baking sheet with parchment paper.
  3. In a bowl, mix cream cheese, agave nectar, and vanilla until smooth.
  4. Roll out the puff pastry into a 13"x9" rectangle, prick the center with a fork, and brush the edges with melted vegan butter.
  5. Spread the cream cheese mixture onto the pastry, top with peaches and blueberries.
  6. Bake for 25-30 minutes until golden brown. Let cool before serving.
