Ingredients
- 1 sheet puff pastry (thawed)
- 8 oz Tofutti dairy-free cream cheese (softened)
- 1–2 tbsp light agave nectar
- 1 ½ tsp pure vanilla extract
- 2 cups sliced peaches
- ½ cup fresh blueberries
Instructions
- Thaw the puff pastry at room temperature for 30-40 minutes and soften the cream cheese.
- Preheat oven to 400ºF and line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, agave nectar, and vanilla until smooth.
- Roll out the puff pastry into a 13"x9" rectangle, prick the center with a fork, and brush the edges with melted vegan butter.
- Spread the cream cheese mixture onto the pastry, top with peaches and blueberries.
- Bake for 25-30 minutes until golden brown. Let cool before serving.
