  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar, packed
  • 1/4 cup light corn syrup
  • 1 tbsp unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until fluffy. Add the egg yolk and vanilla; mix well.
  3. Stir in flour and salt until just combined; the dough should be crumbly but hold together when pressed.
  4. Scoop tablespoon-sized portions of dough, roll them into balls, and place them on the baking sheet two inches apart. Create an indentation in each ball.
  5. In another bowl, mix chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and salt until sticky.
  6. Spoon filling into each cookie indentation generously.
  7. Bake for 12-15 minutes until edges are golden. Let cool on the baking sheet briefly before transferring to a wire rack.
