  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 tsp red pepper flakes (adjustable)
  • 1/2 tsp ground ginger

Instructions

  1. Peel, core, and dice the pineapple into small chunks; set aside.
  2. In a medium saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir until sugar dissolves and bring to a gentle boil over medium heat.
  3. Add the diced pineapple to the boiling syrup. Reduce heat to low and simmer for about 10 minutes, stirring occasionally.
  4. Remove from heat and let cool for around 30 minutes; add fresh mint leaves if desired.
  5. Transfer mixture into sterilized jars, seal tightly, and refrigerate for at least 24 hours before serving.
