  • 450 g dark brown sugar
  • 560 g pumpkin purée
  • 150 g oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 300 g butter (for frosting)
  • 150 g cream cheese (for frosting)
  • 540 g powdered sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, blend dark brown sugar, pumpkin purée, oil, eggs (one at a time), and vanilla extract until smooth.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Divide the batter between prepared pans and bake for about 25 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  6. For the frosting, beat together butter and cream cheese until fluffy. Gradually add powdered sugar and cinnamon; mix until well combined.
