  • 4 tsp pumpkin pie spice
  • 2 cups canned pumpkin (not pie filling)
  • ⅔ cup brown sugar
  • ⅔ cup granulated sugar
  • 1 cup applesauce or canola oil
  • 3 large eggs (room temperature)
  • 1 tbsp vanilla extract
  • 1½ cups semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
  2. In a mixing bowl, whisk together the flour, salt, baking powder, baking soda, and pumpkin pie spice.
  3. In another bowl, mix the canned pumpkin, brown sugar, granulated sugar, applesauce (or oil), eggs, and vanilla until well combined.
  4. Gradually fold the dry mixture into the wet mixture until just combined. Avoid overmixing.
  5. Gently fold in the chocolate chips.
  6. Divide the batter between the prepared loaf pans and sprinkle with reserved mini chocolate chips if desired.
  7. Bake for about one hour or until a toothpick inserted into the center comes out clean.
