  • ¾ cup (96g) all-purpose flour
  • ½ cup (64g) cake flour
  • 1 cup (210g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • 2 large eggs (at room temperature)
  • ⅔ cup (120g) vegetable or canola oil
  • 1 cup (240g) pumpkin puree
  • 1 cup (112g) powdered sugar
  • 2 teaspoons milk
  • 1 teaspoon maple flavoring

Instructions

  1. Preheat oven to 425°F and prepare a muffin pan.
  2. In a bowl, combine flour, sugars, melted butter, and cinnamon for the streusel topping; set aside.
  3. In another bowl, mix together flours, baking powder, baking soda, salt, and spices for the muffin batter.
  4. Add eggs, oil, and pumpkin puree to the dry ingredients; mix until just combined.
  5. Fill muffin cups halfway with batter, sprinkle with cinnamon sugar mixture, add more batter to fill ¾ full, then top with streusel.
  6. Bake at 425°F for 5 minutes; reduce temperature to 350°F and bake for an additional 15–17 minutes until golden brown.
  7. Cool slightly and drizzle with maple glaze before serving.
