Instructions

  3. In another bowl, combine flour, baking powder, baking soda, spices, and butter chunks. Mix in half the pumpkin puree.
  4. In a separate bowl, whisk together remaining pumpkin puree, eggs, oil, and vanilla. Gradually add this mixture to the dry ingredients until just combined.
  5. Layer half the batter in the prepared pan, top with streusel, then repeat layering with remaining batter and streusel on top.
  6. Bake for about 35 minutes; check doneness with a toothpick.
