  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar, dark or light
  • 1/3 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla
  • 8 ounces block cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1/2 teaspoon vanilla
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F and grease a 9” x 5” loaf pan.
  2. In one bowl, combine flour, baking powder, baking soda, salt, and pumpkin pie spice. In another bowl, whisk eggs, sugars, oil, pumpkin puree, and vanilla until smooth. Gradually mix the dry ingredients into the wet.
  3. For the cream cheese layer, beat cream cheese until smooth, add sugar, egg, vanilla, and flour until combined.
  4. Layer half of the pumpkin batter in the pan, spoon dollops of cream cheese mixture on top, then add the remaining pumpkin batter. Swirl gently with a knife.
  5. Bake for about 75 minutes or until a toothpick comes out clean. Cool before serving.
