  • 3 large eggs
  • ¼ cup milk
  • 3 teaspoons corn syrup
  • 4 ounces cream cheese (room temperature)
  • ⅓ cup powdered sugar (or icing sugar)
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar (packed)
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon, ground

Instructions

  1. Preheat oven to 350°F (175°C) and prepare your muffin tin with liners.
  2. In a bowl, mix cream cheese, powdered sugar, and vanilla until smooth; set aside.
  3. In another bowl, whisk together flour, sugar, pumpkin pie spice, baking powder, and salt.
  4. Combine melted butter, eggs, milk, and pumpkin puree in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  6. Fill muffin cups halfway with batter, add cream cheese filling, then top with more batter until three-quarters full.
  7. Bake for 25–35 minutes or until a toothpick comes out clean.
  8. Allow to cool for 10 minutes before transferring to a wire rack.
