  • 390 grams filtered water
  • 100 grams pumpkin puree
  • 530 grams bread flour
  • 2 teaspoons fine sea salt
  • 1 tablespoon ground cinnamon
  • 1/2 tablespoon pumpkin spice
  • 1/4 cup sugar

Instructions

  1. Mix both active and inactive sourdough starters in a bowl with lukewarm water; let sit for 30 minutes.
  2. In another bowl, whisk together all-purpose flour, bread flour, salt, cinnamon, pumpkin spice, and sugar.
  3. Combine the dry ingredients with the starter mixture and pumpkin puree until sticky dough forms.
  4. Knead on a floured surface for about 10 minutes until smooth.
  5. Place dough in a greased bowl; cover and let rise for 4-6 hours until doubled in size.
  6. Shape the risen dough into a loaf; place on parchment paper and let rise for an additional hour.
  7. Preheat oven to 450°F (232°C) while dough rises.
  8. Bake shaped dough for about 60 minutes until golden brown.
  9. Cool on a wire rack before slicing.
