  • 1/2 cup unsalted butter
  • 1 cup dark brown sugar
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1½ cups all-purpose flour
  • 2 tsp ground cinnamon
  • 6 Tbsp melted butter (for streusel)
  • 3/4 cup all-purpose flour (for streusel)
  • 1/2 cup brown sugar (for streusel)

Instructions

  1. Preheat oven to 350°F and grease an 8-or-9 inch metal loaf pan.
  2. In a large bowl, cream softened butter and brown sugar until smooth. Add pumpkin puree and eggs; mix well.
  3. Gradually incorporate spices, baking powder, baking soda, salt, and flour until combined.
  4. In another bowl, mix melted butter, flour, brown sugar, and spice for the streusel topping until it resembles wet sand.
  5. Pour batter into the prepared pan and sprinkle streusel on top.
  6. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool on a wire rack before glazing with a mixture of confectioners' sugar, maple extract, maple syrup, and milk.
