  • ¾ pound chicken breasts (cut into small pieces)
  • 4 cups cooked rice (preferably cold)
  • ½ cup diced white onion
  • 1 cup frozen mixed vegetables (peas and carrots)
  • 2 large eggs
  • 5 tablespoons low-sodium soy sauce
  • 1 ½ teaspoons sesame oil
  • 4 tablespoons butter (divided)
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of neutral oil in a large skillet or wok over medium-high heat. Add chicken, season with salt and pepper, and cook until golden brown. Remove from skillet.
  2. In the same skillet, add another tablespoon of oil. Sauté diced onion until translucent, then stir in mixed vegetables until heated through.
  3. Push vegetables aside, melt remaining butter in the center, then add cooked rice, soy sauce, sesame oil, and lemon juice. Mix well.
  4. Make space for eggs in the center of the pan, scramble them until cooked, then combine everything thoroughly.
  5. Taste and adjust seasoning if needed. Serve hot with optional sesame seeds for garnish.
