  • 1 ½ cups chopped corned beef
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 4 ounces cream cheese
  • 1 tablespoon Dijon mustard
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 ½ cups panko breadcrumbs
  • Vegetable oil for frying
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 1 teaspoon hot sauce
  • ½ teaspoon smoked paprika

Instructions

  1. In a mixing bowl, blend the corned beef, sauerkraut, Swiss cheese, cream cheese, and Dijon mustard until well mixed. Refrigerate for 30 minutes.
  2. Scoop out the mixture into 1-inch balls and place them on a lined baking sheet; refrigerate for another 15 minutes.
  3. Roll each ball in flour, dip into beaten eggs, then coat with breadcrumbs.
  4. Heat vegetable oil in a skillet to 350°F (175°C) and fry the balls in batches for about 2–3 minutes until golden brown. Drain on paper towels.
  5. For the dipping sauce, whisk together mayonnaise, ketchup, relish, hot sauce, and smoked paprika in a separate bowl.
