- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 1 small onion, quartered
- 1 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix orange zest and juice, honey, soy sauce, garlic, thyme, rosemary, salt, and pepper.
- Pat the chicken dry; rub with olive oil and generously apply marinade inside and out. Let marinate for at least 30 minutes.
- Place quartered onions in a roasting pan; set the chicken on top.
- Pour chicken broth around the chicken (not on top). Roast for about 1 hour and 15 minutes or until internal temperature reaches 165°F (75°C).
- Baste every 20 minutes with pan juices. Let rest for 10 minutes before carving.
