  • 1 cup yellow cornmeal
  • 1/2 chopped onion
  • 12 tbsp diced jalapeños
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup canola oil
  • 1 can cream-style corn (14.5 oz)
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 10-inch cast-iron skillet.
  2. In a mixing bowl, combine cornmeal, salt, baking soda, diced jalapeños, and onion.
  3. In another bowl, whisk together eggs, milk, oil, and cream-style corn. Gradually mix wet ingredients into dry ingredients until blended.
  4. Fold in cooked rice and shredded cheddar cheese until evenly distributed.
  5. Pour the batter into the prepared skillet and bake for 45-50 minutes or until golden brown and a toothpick comes out clean.
