  • 1 lb medium or large shrimp, peeled and deveined
  • 8 small white corn tortillas or hard taco shells
  • ½ small purple cabbage (2 cups shredded)
  • 1 large avocado, diced
  • ½ red onion, diced
  • 4 oz Cotija cheese (about 1 cup grated)
  • Fresh cilantro, chopped
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 ½ tablespoons lime juice, squeezed from 1 medium lime
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon Sriracha sauce, or to taste

Instructions

  1. In a medium bowl, combine thawed shrimp with minced garlic and seasonings (salt, pepper, cumin, cayenne).
  2. Heat olive oil in a non-stick pan over medium-high heat. Cook shrimp for 1-2 minutes on each side until pink and opaque.
  3. Toast tortillas over low flame or in a skillet until lightly charred.
  4. Prepare toppings: shred cabbage, dice avocado and onion, chop cilantro.
  5. Whisk together sauce ingredients until smooth.
  6. Assemble tacos by layering shrimp and desired toppings on toasted tortillas.
