  • 3 pounds sirloin tip roast
  • 1.5 pounds baby potatoes
  • 2 cups baby carrots
  • 1 large yellow onion
  • 1 cup beef broth
  • 4 tablespoons apple cider vinegar
  • 3 tablespoons soy sauce
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons unsalted butter

Instructions

  1. Place baby potatoes, carrots, and sliced onion in the bottom of the slow cooker.
  2. Add cubes of butter on top of the vegetables.
  3. Season the sirloin tip roast with spices and place it on top of the vegetables.
  4. In a bowl, whisk together beef broth, vinegar, soy sauce, and remaining seasonings; pour over the roast.
  5. Cover and cook on low for 8-10 hours or high for 4-5 hours until meat is tender.
  6. Shred the meat in the slow cooker and mix with the vegetables before serving.
