Ingredients
- 3 pounds sirloin tip roast
- 1.5 pounds baby potatoes
- 2 cups baby carrots
- 1 large yellow onion
- 1 cup beef broth
- 4 tablespoons apple cider vinegar
- 3 tablespoons soy sauce
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1 teaspoon ground black pepper
- 3 tablespoons unsalted butter
Instructions
- Place baby potatoes, carrots, and sliced onion in the bottom of the slow cooker.
- Add cubes of butter on top of the vegetables.
- Season the sirloin tip roast with spices and place it on top of the vegetables.
- In a bowl, whisk together beef broth, vinegar, soy sauce, and remaining seasonings; pour over the roast.
- Cover and cook on low for 8-10 hours or high for 4-5 hours until meat is tender.
- Shred the meat in the slow cooker and mix with the vegetables before serving.
