Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 oz taco seasoning mix
- 14.5 oz diced tomatoes with green chilies
- 15 oz black beans, drained
- 15 oz corn, drained
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- 6 tortillas, cut into strips
Instructions
- Brown the ground beef in a skillet over medium-high heat; drain excess fat.
- Add the diced onion; cook until softened (about 4 minutes), then stir in garlic and sauté for another minute.
- Mix in taco seasoning and diced tomatoes; remove from heat.
- In a slow cooker sprayed with non-stick spray, layer the salsa, tortilla strips, half of the beef mixture, black beans, and corn. Repeat the layers and top with remaining tortilla strips and salsa.
- Cover and cook on low for 4-5 hours or high for 2-3 hours.
- About 15 minutes before serving, sprinkle cheese on top and cover until melted.
