  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 oz taco seasoning mix
  • 14.5 oz diced tomatoes with green chilies
  • 15 oz black beans, drained
  • 15 oz corn, drained
  • 1 cup salsa
  • 1 cup shredded Mexican cheese blend
  • 6 tortillas, cut into strips

Instructions

  1. Brown the ground beef in a skillet over medium-high heat; drain excess fat.
  2. Add the diced onion; cook until softened (about 4 minutes), then stir in garlic and sauté for another minute.
  3. Mix in taco seasoning and diced tomatoes; remove from heat.
  4. In a slow cooker sprayed with non-stick spray, layer the salsa, tortilla strips, half of the beef mixture, black beans, and corn. Repeat the layers and top with remaining tortilla strips and salsa.
  5. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. About 15 minutes before serving, sprinkle cheese on top and cover until melted.
