  • 12 full-size graham crackers
  • 6 tablespoons unsalted butter (melted)
  • 1 cup sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 heaping cups mini marshmallows

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 inch baking pan with parchment paper.
  2. Crush graham crackers and mix with melted butter and sugar to form the crust. Press into the pan and bake for 15-20 minutes until golden.
  3. In a bowl, whisk together vegetable oil, sugar, eggs, and vanilla extract. Add cocoa powder, flour, salt, and baking powder; mix until smooth. Fold in chocolate chips.
  4. Pour brownie batter over the cooled crust and bake for 30-40 minutes until set.
  5. Remove from oven, sprinkle mini marshmallows on top, and broil for about 2 minutes until golden brown.
