  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. In a bowl, cream together vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
  3. In another bowl, combine flour, baking powder, pumpkin pie spice, and salt.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Chill the dough for at least 30 minutes.
  6. Scoop out dough balls onto a parchment-lined baking sheet and flatten slightly.
  7. Bake for 10–12 minutes; allow cooling completely before frosting.
  8. For frosting: Beat together softened vegan butter, vanilla paste/extract, cinnamon, brown sugar, and powdered sugar until smooth. Frost cooled cookies as desired.
