Ingredients
- ¼ cup warmed non-dairy or regular dairy milk
- 1 ½ teaspoons instant yeast
- 2 teaspoons granulated sugar
- 2 cups + 1 tablespoon all-purpose flour
- 200 grams (¾ cup) sourdough discard (unfed, at room temperature)
- 1 beaten egg
- 1 tablespoon chopped fresh parsley or rosemary
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 2 tablespoons melted unsalted butter
- 7 tablespoons softened unsalted butter (for filling)
- Flaky sea salt (for topping)
Instructions
- In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, garlic powder, and melted butter. Mix on low speed until combined.
- Knead the dough on a floured surface for about 3–4 minutes until smooth.
- Place in a greased bowl, cover with plastic wrap, and let rise for 60–90 minutes until doubled in size.
- Prepare the topping mixture by combining softened butter with herbs, garlic powder, and salt.
- Divide the dough into 12 pieces; flatten each piece and spread with the topping mixture. Fold in half and place in a greased loaf pan.
- Let it rise again for about 30–45 minutes until puffy.
- Preheat oven to 350°F and bake for about 30 minutes; cover with foil for an additional bake of 5–10 minutes until golden brown.
