  • 1 block extra firm tofu
  • 1 can black beans
  • 1 batch cilantro lime rice
  • 1 red pepper
  • 1 orange pepper
  • 1 avocado
  • 2 tablespoons sriracha
  • 1 tablespoon olive oil

  • onion powder
  • chili powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Press tofu between towels with a weight for 5–10 minutes. Cube tofu and mix with sriracha and olive oil.
  3. Coat the cubed tofu with spices.
  4. Spread tofu and chopped peppers on a parchment-lined baking sheet.
  5. Bake for 20 minutes; brush remaining sriracha on tofu and bake an additional 10–15 minutes until crispy.
  6. Assemble bowls with cilantro lime rice as the base, topped with black beans, roasted peppers, crispy tofu, sliced avocado, and spicy tahini dressing.
