  • 2 large Portobello mushrooms
  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the Portobello mushrooms and remove the stems and gills.
  3. Place the mushroom caps on a parchment-lined baking sheet. Drizzle with olive oil and season with garlic powder, salt, and pepper. Bake for 10–12 minutes.
  4. In a skillet, melt butter over medium heat and sauté spinach until wilted (3-4 minutes). Remove from heat and let cool.
  5. Mix the cooled spinach with ricotta, mozzarella, Parmesan, and red pepper flakes in a bowl.
  6. Stuff each mushroom cap with the spinach-cheese mixture and return to the oven for another 10–12 minutes until bubbly.
