  • 1 tbsp Olive oil
  • 8 oz sliced Mushrooms
  • 3 cloves minced Garlic
  • 4 cups Baby spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: Red pepper flakes and fresh parsley for garnish

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook for 5–7 minutes until browned.
  3. Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
  4. Add baby spinach to the skillet and cook until wilted, about 2–3 minutes.
  5. Toss the cooked orzo into the skillet with the mushroom-spinach mixture, mixing well.
  6. Remove from heat, sprinkle with Parmesan cheese, and season with salt and black pepper.
  7. Garnish with red pepper flakes and parsley if desired, then serve warm.
