  • 1½ cups green split peas (rinsed)
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone (or ham hocks)

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, salt, and pepper; cook until softened. Stir in garlic and spices for an additional minute.
  2. Simmer the soup: Add split peas, ham bone, bay leaves, and chicken broth. Bring to a boil, then reduce heat to low and simmer uncovered for 60–90 minutes.
  3. Shred the ham: Remove the ham bone, shred the meat off it, return it to the pot, and discard bones/fat.
  4. Blend for creaminess: Remove about 2 cups of soup and blend until smooth; return to pot.
  5. Final seasoning & serve: Taste your soup, adjust seasoning if necessary, and serve hot with hearty bread.
