- In another bowl, mix wet ingredients: oil, pumpkin, eggs, and vanilla until smooth.
- Combine wet and dry mixtures gently until just combined.
- Prepare cream cheese filling by mixing softened cream cheese with sugar, milk, flour, and vanilla until creamy.
- Spoon batter into muffin cups, add cream cheese filling on top, then cover with remaining batter.
