  • 1 cup cocoa powder

  • 2 cups mashed sweet potato (about 34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350F (180C). Grease a 9 or 10-inch cake pan with coconut oil.
  2. In a food processor, combine coconut flour, cocoa powder, sugar, baking powder, and salt. Add mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract. Process until smooth.
  3. Pour the batter into the greased cake pan and bake for 45-50 minutes. Check for doneness by inserting a skewer; it should come out clean.
