Ingredients
- 2 tbsp olive oil or butter
- 1/2 onion (diced)
- 2 cloves garlic (minced)

- 1 packet taco seasoning
- 10 oz diced tomatoes with green chiles
- 1 1/2 cups beef broth
- 3 tbsp tomato paste
- 3 oz cream cheese (softened)
- 12 oz spaghetti (cooked al dente)
- 1 1/2 cups shredded cheese (cheddar, Mexican blend, etc.)
- Cilantro for garnish (optional)
Instructions
- Boil water in a pot and cook spaghetti until al dente; drain.
- In a large skillet over medium heat, sauté diced onion and minced garlic in olive oil or butter until soft.
- Add ground beef to the skillet; cook until browned and drain excess fat.
- Stir in taco seasoning, diced tomatoes, beef broth, tomato paste, and cream cheese; cook until creamy.
