- 2 (5 oz) cans of drained tuna
- 1 medium onion, chopped
- ½ stalk celery, chopped
- 1 clove garlic, minced
- 1 tablespoon parsley, chopped
- 3–4 tablespoons mayonnaise
- 3 tablespoons extra virgin olive oil
- ⅓ cup shredded mozzarella cheese
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, mozzarella cheese, salt, and pepper. Mix until well combined.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Butter one side of a slice of bread and place it butter-side down in the skillet.
- Scoop about 2 tablespoons of the tuna mixture onto the bread while browning.
- Butter another slice of bread on one side and place it on top of the tuna mixture (buttered side up).
- Cook until golden brown on both sides and the cheese is melted.
