  • 1/2 sweet onion, diced
  • 57 cloves garlic, minced
  • 1 lb ground turkey
  • 28 oz canned petite diced tomatoes
  • 16 oz canned tomato sauce
  • 1/2 cup chicken broth
  • 1 large sweet potato, cubed (~12 oz)
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp granulated sugar
  • 1 cup frozen corn
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic for 1–2 minutes until fragrant.
  2. Add ground turkey, breaking it apart as it cooks; season lightly with salt and pepper until browned.
  3. Stir in diced tomatoes, tomato sauce, chicken broth, sweet potatoes, and spices. Bring to a boil.
  4. Lower heat and simmer for about 15 minutes until sweet potatoes are fork-tender.
  5. Mix in frozen corn and cook on medium-high until heated through.
  6. Serve topped with chopped cilantro, shredded cheddar cheese, and sliced avocado.
