Ingredients
- 1 cup salted butter (room temperature)
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 6 tablespoons salted butter (for caramel)
- 1 cup granulated sugar
- ½ cup light corn syrup
- 1 cup heavy whipping cream (divided)
- 1 ¼ cups milk or dark chocolate
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, cream together room-temperature butter and powdered sugar until smooth. Gradually add flour and mix until combined. Press evenly into a greased 9×13 inch baking dish and bake for 20 minutes until golden.
- For the caramel filling, melt butter in a saucepan over medium heat with salt, corn syrup, sugar, and half of the heavy whipping cream. Stir constantly until melted and bring to a boil for about 5 minutes until thickened. Remove from heat and stir in vanilla.
- Pour warm caramel over the baked shortbread base; let it cool while preparing the chocolate topping.
- Heat the remaining heavy whipping cream in another saucepan until it simmers. Remove from heat, add chopped chocolate, and stir until smooth.
- Pour melted chocolate over cooled caramel layer and spread evenly. Refrigerate for at least 4 hours before cutting into squares.
