  • 1 cup yellow onion (chopped)
  • 3 garlic cloves (minced)
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 3 Yukon gold potatoes (peeled and chopped)
  • 1 cup green beans (fresh or frozen)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 1 cup frozen corn
  • 1 cup frozen peas

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chopped carrots, celery, and onion; sauté for about 5 minutes until tender.
  2. Stir in minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add vegetable broth, diced tomatoes (with liquid), potatoes, green beans, Italian seasoning, salt, and black pepper. Bring to a boil then reduce to simmer for 8–10 minutes until veggies are tender.
  4. Mix in frozen corn and peas; cook for another 2 minutes until heated through.
